Quick Italian tomato sauce

    Simple is often best when it comes to Italian recipes, and this Italian tomato sauce is no exception. Perfect over almost any pasta imaginable, it's also delicious to use for bruschetta, vegetarian lasagne and more.

    Serves: 6 

    • 1kg ripe tomatoes
    • 100ml olive oil
    • 12 fresh basil leaves
    • salt and pepper

    1. With a sharp knife, mark an 'x' at the bottom of each tomato.
    2. Submerge each tomato in boiling water for a few seconds, then remove and immediately submerge in a bowl of ice-cold water.
    3. Peel the tomatoes and then chop.
    4. Simmer the tomatoes in a saucepan for 10 minutes, uncovered. At the end, add the olive oil, basil and seasoning to taste.

    this is the first time I've made a pasta sauce without a tin or jar. A friend gave me some tomatoes from her allotment so I came on here searching for something to do with them. Delicious! easy to make - at age 70 I've never skinned a tomato before - but this was fun. I just wish I'd made enough to freeze ... now I'll be searching for tomatoes to make more.  -  24 Sep 2014
