With a sharp knife, mark an 'x' at the bottom of each tomato.
Submerge each tomato in boiling water for a few seconds, then remove and immediately submerge in a bowl of ice-cold water.
Peel the tomatoes and then chop.
Simmer the tomatoes in a saucepan for 10 minutes, uncovered. At the end, add the olive oil, basil and seasoning to taste.
this is the first time I've made a pasta sauce without a tin or jar. A friend gave me some tomatoes from her allotment so I came on here searching for something to do with them.
