About this recipe: I have basically used the recipe from the Mrs Crimbles® website but I have tweaked it a bit. This recipe is really very nice, the cake is soft and moist and keeps well.

Serves: 8 

  • 70g mixed fruit
  • 30g glace cherries, halved
  • 50ml hot black tea
  • 1 packet Mrs Crimbles® cake and muffin mix
  • 1 teaspoon mixed spice
  • 1 egg
  • 50ml cold water
  • 70g margarine, melted
  • 1 tablespoon black treacle

  1. Soak the mixed fruit and glace cherries in the hot black tea for 2 hours.
  2. Preheat the oven to 190 C / Gas 5. Grease and line a 900g loaf tin with baking parchment.
  3. Put the packet of Mrs Crimbles® cake mix in a small bowl, mix in the spice. Add the egg, cold water, melted margarine and treacle. Whisk until smooth, about 1 minute. Add the fruit and tea and mix well. Pour the mixture into the prepared tin.
  4. Bake in the preheated oven for 45 minutes until a skewer inserted into the centre comes out clean. Remove from the oven and cool before serving.
