Preheat oven to 220 C / Gas 7.
Place sliced vegetables in a roasting pan or ceramic baking dish. Drizzle generously with olive oil; toss the vegetables to ensure they are evenly coated with oil. Drizzle with honey or maple syrup, tossing again to make sure the vegetables are evenly coated.
Roast for about 30 minutes or until vegetables are tender and the parsnips are golden and caramelised. Season with salt, pepper and thyme leaves; serve.
