Honey roasted carrots and parsnips

    Carrots and parsnips taste sweet and delicious when roasted with a generous helping of honey or maple syrup. Add a few fresh sprigs of thyme leaves for the last 10 minutes of cooking for added flavour.

    Serves: 6 

    • 2 large parsnips, peeled and sliced into quarters
    • 2 large carrots, peeled and sliced into quarters
    • 2 or 3 tablespoons olive oil, or as needed
    • 3 or 4 tablespoons honey or maple syrup
    • salt and freshly ground black pepper to taste
    • a few sprigs of fresh thyme

    1. Preheat oven to 220 C / Gas 7.
    2. Place sliced vegetables in a roasting pan or ceramic baking dish. Drizzle generously with olive oil; toss the vegetables to ensure they are evenly coated with oil. Drizzle with honey or maple syrup, tossing again to make sure the vegetables are evenly coated.
    3. Roast for about 30 minutes or until vegetables are tender and the parsnips are golden and caramelised. Season with salt, pepper and thyme leaves; serve.
