About this recipe:A soufflé is always bound to impress. Here's a classic combination that adds vegetable value to a light and fluffy soufflé. Serve straight from the oven, with wholemeal bread and a tomato salad.
1 tsp unsalted butter
15g Parmesan or Italian-style hard cheese, freshly grated
15g fine dry breadcrumbs
1 small cauliflower, about 340g
300ml semi-skimmed milk
3 tbsp cornflour
1 bay leaf
4 eggs, separated
85g white Stilton cheese, finely crumbled
1 tbsp wholegrain mustard
2 tbsp snipped fresh chives

Preheat the oven to 190°C/gas 5, and put a baking sheet in the oven to heat. Lightly grease a 1.7 litre soufflé dish with the butter. Mix together the Parmesan and breadcrumbs and sprinkle half of this mixture over the bottom and sides of the dish, turning the dish to coat evenly. Set aside.
Cut the cauliflower into small florets and cook in a steamer over boiling water for 8–10 minutes until very tender. Tip onto a plate and leave to cool for a few minutes, then purée with 100ml of the milk in a food processor or blender to a smooth consistency.
Mix the cornflour with a little of the remaining milk to make a smooth paste. Heat the rest of the milk until almost boiling, then pour onto the cornflour mixture, stirring constantly. Return to the pan, add the bay leaf and stir over a moderate heat until the sauce is thickened and smooth.
Pour the sauce into a large mixing bowl and remove the bay leaf. Beat in the egg yolks, one at a time. Add the Stilton and stir until melted, then stir in the cauliflower purée, mustard and chives. Season to taste.
Whisk the egg whites in a large, clean bowl, until stiff peaks form. Whisk one third of the whites into the sauce mixture to lighten it, then gently fold in the rest of the whites.
Spoon the mixture into the prepared soufflé dish and sprinkle the top with the remaining breadcrumb mixture. Set the dish on the hot baking sheet and bake for 35 minutes or until well risen and golden brown. Serve at once.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
Instead of Stilton, any strongly flavoured cheese can be used, such as Gorgonzola or Gruyère. However not all cheeses are suitable for strict vegetarians, so check the information on the packaging.
