Favourite chilli con carne

    One of my favourites while I was growing up. This is good to freeze, and the beef mince can be swapped for Quorn® to make a healthier option.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 500g beef mince
    • 1 onion, chopped
    • 1 clove garlic, chopped
    • 1 red pepper, seeded and chopped
    • 1 (400g) tin kidney beans, drained and rinsed
    • 1 (400g) tin chopped tomatoes
    • 2 teaspoons chilli powder
    • 1 teaspoon ground cumin
    • 1 1/2 tablespoons gravy granules

    1. Heat the vegetable oil in a large pan then add the beef mince and stir until brown. Add the onion and garlic and pepper to the pan. Cook until the onion is soft.
    2. Add the kidney beans, chopped tomatoes, chilli powder, and cumin to the pan. Stir and simmer 20 minutes.
    3. Add the gravy granules to thicken. Stir and simmer 5 more minutes before serving.
