Stuffing for poultry or pork

    Simple savoury stuffing for poultry or pork. You can use it to stuff roast chicken or a pork roulade, for example, or simply cook it in a baking dish and enjoy it on the side.

    Serves: 4 

    • 140g (5 oz) fresh breadcrumbs
    • 1 large onion, chopped
    • 2 teaspoons dried mixed herbs
    • salt and black pepper
    • 100g (3 1/2 oz) margarine, melted

    1. Preheat the oven to 180 C / Gas 4.
    2. Put breadcrumbs in a large bowl and mix in the chopped onion. Add the dried mixed herbs and salt and pepper and mix with a fork.
    3. Melt the margarine in the microwave and add to dry mix. If you feel the mixture is too crumbly you can add a little hot water, but not too much.
    4. Put your stuffing mix into an ovenproof dish and bake in oven for about 20 to 30 minutes, or until onions are cooked.


    I bake my stuffing in a tin foil container and when cold it is ready to go in the freezer.
