Fruit muffin recipe

    These fruit muffins taste nice no matter what you add to them. Try glace cherries, strawberries or banana.

    Ingredients
    Makes: 6 muffins

    • 175g self raising flour
    • 1/2 teaspoon bicarbonate of soda
    • 50g caster sugar
    • 100ml milk
    • 40ml oil
    • 1 medium egg
    • 75g chopped fruit

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 190 C / Gas 5. Place 6 paper cases in a muffin tin.
    2. Mix flour with bicarbonate of soda and sugar.
    3. Measure oil and milk into jug. Add eggs and beat well.
    4. Add chopped fruit to flour mixture.
    5. Pour the wet mixture from the jug into the bowl with the flour and fruit. Mix well until combined.
    6. Spoon into muffin cases.
    7. Bake for 15 to 20 minutes, until risen and golden brown.
    8. Remove from oven, allow to cool and enjoy!
