Need and easy yet tasty midweek supper? Look no further than this great recipe for easy lamb meatballs. This recipe will feed four to six in under an hour. Serve with pasta or a salad on the side and don't forget some crusty bread to mop up the sauce.

Ingredients
Serves: 4
- 800g minced lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chopped fresh oregano
- 1 teaspoon chopped fresh thyme
- 2 slices thick white bread, breadcrumbed
- 1 egg, beaten
- salt and pepper, to taste
- 1 tablespoon olive oil
- 1 (350g) jar tomato pasta sauce
- 1 (400g) tin chopped tomatoes, drained
- chopped fresh basil, to taste

- Put lamb, onion, garlic, oregano, thyme, breadcrumbs, egg, salt and pepper into a bowl and mix well using your hands. Roll the mixture into tablespoon-sized balls.
- Warm the oil in a frying pan over a medium heat and when hot add the meatballs. Keep turning until brown all over. Remove from the pan using a slotted spoon and place on kitchen paper.
- Pour away any excess oil from the frying pan. Add jar of pasta sauce and tomatoes, scraping any bits on the bottom of the pan. Put the meatballs back in covering with the sauce. Cover and simmer for about 20 to 30 minutes until the meatballs are no longer pink in the centre.
