Cinnamon crunch cookies

    These crunchy cookies are rolled in cinnamon sugar and so simple to make and with very few ingredients.

    Makes: 16 cinnamon cookies

    • 115g butter, softened
    • 70g light brown sugar
    • 40g caster sugar
    • 1 teaspoon vanilla extract
    • 1/2 tablespoon honey
    • 175g self raising flour
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon caster sugar

    1. Mix together the butter and sugars till light and fluffy using a freestanding mixer or an electric whisk.
    2. Add the honey and vanilla and mix again.
    3. Combine the butter and sugar mix with half of the flour. Mix everything together until combined then mix in the remaining flour.
    4. Put the cinnamon and extra 1/2 teaspoon sugar onto a plate. Roll the dough into balls (about 25g each). Roll the balls into the sugar and cinnamon, then place on a greased baking tray. Don't flatten the dough and leave enough space for them to spread.
    5. Bake in a preheated oven at 180 C / Gas 4 for 10 to 12 minutes, turning the baking tray for the last 2 minutes to achieve an even bake.
    6. Once baked leave on the baking tray to cool down. Once cooled, transfer to a cooling rack to cool down completely.


    Add the sugar and cinnamon to the plate a little at a time (unless you want a massive cinnamon hit).

    I loved this recipe so much! I would totally recommend it. At first I was not so sure if I should use this recipe as it had no reviews but I gave it a go and I loved it. I love cinnamon so I added a teaspoon into the mixture and it was epic! 😍 💕 🍪  -  23 Apr 2015
