About this recipe: Celebrate the heavenly pairing of strawberries and white chocolate in this fruity and moist loaf cake. A wonderful choice for a special occasion like Mother's Day.


Makes: 1 white chocolate and strawberry loaf cake

  • 150g icing sugar
  • 3 eggs, beaten
  • 150g butter, melted
  • 1 teaspoon vanilla extract
  • 150g self raising flour
  • 1 teaspoon baking powder
  • 140g strawberries, chopped
  • 110g white chocolate, chopped (or chips)

  1. Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin and line with baking parchment.
  2. Use an electric whisk to whisk the sugar and eggs in a bowl. Stir in the melted butter and vanilla extract then sift in the flour and baking powder. Lastly gently stir in the strawberries and white chocolate. Pour into the prepared tin and smooth the top.
  3. Bake in the preheated oven for 40 to 60 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and enjoy warm, or allow to cool on a cooling rack.
