    About this recipe: Refreshing and perfect with a night time cocktail!!!!!!!

    Ingredients

    • 1 litre freshly squeezed blood orange juice
    • A handful of mint leaves
    • 500ml champagne
    • For the stock syrup
    • 630g caster sugar
    • 1 cinnamon stick
    • Zest of 1 orange

    Method

    1. Place all the ingredients for the stock syrup in a saucepan and add 525ml of water. Bring to the boil and then remove from the heat to cool. Strain the mixture.
    2. Mix together the stock syrup with the orange juice. Put in a ice cream machine and churn between 20-30 minutes. Put in the freezer to set.
    3. When set add a few mint leaves to a cocktail glass and add a splash or two (depending how your feeling maybe three) of your chosen champagne. Enjoy straight away. xxxxx
