Economy style Scottish stovies

    Traditionally made with shredded left over roast beef or steak, this is an economic but full of flavour modern version to satisfy all the family.

    Serves: 3 

    • 1 tablespoon lard
    • 1 large onion, finely sliced
    • 225g corned beef, shredded
    • salt and freshly ground black pepper, to taste
    • 4 large potatoes, partially boiled and sliced thinly
    • beef stock, as needed

    1. Heat the lard in a large pan, add the onion and cook and stir gently over a low heat until soft.
    2. Add the corned beef and mix it in well with onions and season to taste with salt and pepper.
    3. Layer over the potato slices and cover with stock to taste and consistency required. If becomes too dry, add additional stock as required.
    4. Simmer gently on the hob for about an hour or so or until potatoes are soft and fully cooked through.


    To make the traditional version, substitute shredded left over roast beef or steak for the corned beef.
