Minty lemonade

    I had a minty lemonade when I was travelling in the Middle East. I wanted to try and imitate it. It cools you down on a hot summer day! Adjust the amount of mint to taste.

    Serves: 4 

    • 40g (1 1/2 oz) fresh mint leaves
    • 250ml (8 fl oz) cold water
    • 6 lemons, juiced
    • 120g (4 oz) sugar
    • 4 mint leaves, for garnish

    Prep:15min  ›  Cook:1hr  ›  Ready in:1hr15min 

    1. Place mint leaves, water, lemons and sugar in a blender. Blend until mint leaves are evenly chopped.
    2. Cool the mixture in the refrigerator for an hour.
    3. Serve in cold glasses (refrigerate them for 15 mins) with a fresh mint leaf.

    I also tried this in the middle east and loved it. The mint didn't blend very well for me but that was probably the fault of my blender. I strained the end mixture after blending it to get the mint leaves out. This still left a lovely minty taste without big clumps of mint.  -  08 Aug 2012
