Banana loaf cake

    This is my simple banana loaf, the mixture goes into 2 loaf tins or makes 12 cupcakes/muffins. My mum made this once and I just adapted the recipe to experiment with textures and flavours.

    Makes: 2 banana loaf cakes

    • 170g (6 oz) margarine
    • 170g (6 oz) caster sugar
    • 170g (6 oz) self-raising flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon (optional)
    • 3 eggs
    • 1 splash of milk
    • 2 bananas, mashed
    • 1 handful dried fruit or nuts (optional)

    1. Preheat the oven to 190 C / Gas 5.
    2. Combine the margarine, sugar, flour, baking powder, cinnamon, eggs and milk, and mix until smooth.
    3. Add the mashed banana and mix again, there can still be lumps of banana - this is okay. Add any dried fruit or nuts at this stage and mix with a spoon.
    4. Grease and line two loaf tins with baking parchment and divide the mixture evenly between them.
    5. Bake in the oven on the middle shelf for 25 to 30 minutes. Check if done by placing a skewer or a knife in the middle of the cake, if the skewer comes out clean the cake is ready, if not continue to bake for 10 minutes then test again, repeat until done. Remove from the oven and cool.


    This cake sometimes rises and sometimes it doesn't. Perhaps only use one banana rather than two, as it weighs the cake down.

    I used light brown sugar instead of caster, a pinch of ground nutmeg instead of cinnamon and I added glace cherries. Instead of using two small loaf tins, I baked it in a normal size cake tin, so it took a bit longer to bake (50 minutes) but it's absolutely delicious and really moist too. I'll definitely be baking it again!  -  16 Nov 2014


    This cake is so nice and moist. Was really simple to make. I added mixed fruit but I wish that I hadn't as it takes over the flavour of banana. I will do it without from now on.  -  14 May 2014
