Roast Rabbit with Sage and Onion Stuffing

    Quite the best way to enjoy either a wild or farmed rabbit.

    • One wild or farmed rabbit.
    • Home made sage and onion stuffing


    1. Soak the rabbit over night in heavily salted water.
    2. Rinse and dry the rabbit and stuff with sage and onion stuffing.
    3. Place in oven tin and pour a little Sunflower oil over the rabbit.
    4. Cover with foil and cook for 20 mins at 200 degrees Centigrade.
    5. Turn down to 140 degrees Centigrade and cook for further 40 mins.
    6. Remove foil and raise oven to 200 degrees Centigrade and brown for 10 mins.
    7. Remove from oven and rest for 10 mins whilst making gravy.
    8. Serve with mashed swede and potatoes and carrots.


    This is the traditional Welsh way of serving rabbit.
