About this recipe: I found this recipe in Connemara. They are gorgeous and taste perfect with jam and cream.

Makes: 8 to 12 scones

  • 450g self-raising flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 50g caster sugar, plus extra for topping
  • 110g butter
  • 1 egg
  • 125ml milk
  • 1 egg, beaten, for glazing

  1. Sift flour, baking powder and salt into a bowl. Stir in the sugar, then lightly work in the butter until the mixture resembles breadcrumbs.
  2. Add the egg and enough milk to moisten. Mix well until it has a soft doughy texture - but not too moist.
  3. Gather the dough into a ball, turn onto a floured board, roll out to 2.5cm thick. Cut out with cutter, place on greased baking tray. Brush top with egg wash, and sprinkle with a little sugar.
  4. Bake in preheated oven at 200 C / Gas 6 for 5 minutes, reduce to 180 C / Gas 4 for another 5 to 10 minutes.
