Easiest most delicious mushroom soup ever

    A truly lovely soup, good for a starter or as a lunch for two. It couldn't be simpler as it's ready to eat in 15 minutes, why bother opening a tin? Never failed me yet!

    Serves: 2 

    • 25g (1 oz) butter
    • 25g (1 oz) plain flour
    • 300ml (1/2 pt) chicken stock
    • 300ml (1/2 pt) milk
    • 1 tablespoon chopped fresh parsley
    • 110g (4 oz) large dark flat mushrooms, finely chopped
    • salt and pepper to taste
    • 1 tablespoon lemon juice
    • 2 to 4 tablespoons cream

    1. Place all ingredients apart from the lemon juice and cream into a saucepan. Bring to the boil whisking continuously until thickened, then simmer very gently for 5 minutes.
    2. Remove from heat, add the lemon juice and blend till smooth with a hand blender or a food processor. Return to the saucepan and heat through again. Pour into a heated tureen or individual serving dishes and swirl over the cream.


    Serve with bread rolls of choice or melba toast.
