Macaroni cheese for two

    40 min

This is a basic macaroni cheese recipe which is based upon an amalgamation of a couple of recipes from old books. Macaroni cheese is one of my favourite dishes, but obviously is not terribly healthy and it is soooo easy to over indulge so this recipe is refined to make just enough for a meal for two people to snuggle up to on a cold and rainy evening.

    Serves: 2

    • 125g macaroni
    • 20g butter
    • 20g plain flour
    • 300ml milk
    • 150g grated Cheddar cheese

    Prep:5min  ›  Cook:35min  ›  Ready in:40min

    1. Cook macaroni in salted boiling water for 10 minutes; drain and leave to one side.
    2. Melt butter in a saucepan, then add flour to form a roux. Whisk in the milk gradually over the course of 10 to 15 minutes.
    3. Remove sauce from heat once thickened, then stir in 2/3 of the cheese. Stir in macaroni and place in ovenproof dish. Sprinkle over top the remaining cheese.
    4. Brown under a preheated hot grill and serve with soft white bread.
