Bulgur pilaf

    A delicious alternative to rice. Serve this tomato flavoured bulgur wheat pilaf with meat or fish. It goes especially well with kebabs or your favourite Middle Eastern fare.

    Serves: 4 

    • 2 tablespoons butter or oil
    • 1 onion, chopped
    • 1 teaspoon tomato puree
    • 140g bulgur wheat, rinsed and drained
    • 1 tomato, diced
    • 500ml hot chicken stock
    • 1 teaspoon salt

    1. Heat the butter or oil in a medium saucepan. Add the onion and cook for 3 minutes. Stir in the tomato puree; cook for a further 2 minutes. Add the bulgur, and cook and stir for 3 minutes.
    2. Add the hot chicken stock and salt. Bring to the boil, then cover and simmer over low heat till the bulgur has absorbed all of the stock.
