Makes: 1 (20cm) lemon drizzle cake

  • 250g butter, softened
  • 250g caster sugar
  • 2 lemons, zest and juice
  • 4 eggs
  • 250g self raising flour
  • 2 tablespoons hot water
  • 75g granulated sugar

  1. In a big bowl add the butter. To the bowl add the sugar and mix well with the zest of the lemons.
  2. Mix in the eggs one at a time. After the fourth egg add 2 tablespoons of the flour and mix well.
  3. Fold in the rest of the flour and add 2 tablespoon of hot water. Stir and mix the mixture for about an extra 2 minutes.
  4. Put it into a 20cm loose-bottomed cake tin which has been lined with parchment.
  5. Put it into a pre-heated oven at 180 C / Gas 4 for 35 to 45 minutes or until a cocktail stick has been pricked through the cake and it comes out clean.
  6. When the cake comes out prick it all over.
  7. Make the drizzle by combining 75g of granulated sugar along with the juice of the lemons. Mix the sugar and lemon juice well until the sugar has been dissolved.
  8. Once the cake has cooled down drizzle over the lemon drizzle, let it soak in and ENJOY!


After the fourth egg add a couple of tablespoons of the flour to stop the mixture from curdling.
