About this recipe:
Yummy vanilla biscuits for any occasion. These are similar to shortbread biscuits, with a rich buttery texture and superb vanilla flavour. Use any sort of cutter you desire for different shapes, or simply slice into fingers.
6 to 8 large biscuits
125g unsalted butter, softened
50g caster sugar
2 teaspoons vanilla extract
170g plain flour

Preheat your oven to 180 C / Gas 4. Line a tray with baking parchment.
First put your butter and sugar into a bowl and mix until they are light and fluffy
Add your vanilla extract, then gradually add your flour until it forms a paste. Best to mash this with your hands at this point.
Put a tad bit of flour on the bench and roll out your biscuit dough. Cut out shapes (I used Minnie and Micky Mouse cutters). Place on the prepared tray.
Put in the oven for 25 minutes, or longer if you like extra crispy biscuits. Cool on the tray, then remove to a wire rack to cool completely. Optional
Decorate your cooled biscuits with icing or fondant icing.
These were not sweet enough for us, but fine for adding a layer of icing on the top as this sweetened it enough.
