Best lemon drizzle cake

    This really is the best lemon drizzle cake! I love a square of this cake served with cream and berries.

    Makes: 1 lemon drizzle cake

    • 3 eggs
    • 170g self raising flour
    • 170g caster sugar
    • 170g butter
    • 1 teaspoon baking powder
    • juice and zest of 2 lemons
    • 110g icing sugar
    • To serve
    • fresh squirty cream
    • 1 handful fresh berries

    1. Preheat the oven to 180 C / Gas 4. Grease a 18cm square cake tin with butter.
    2. Mix together the eggs, flour, sugar, butter, baking powder and the zest of the 2 lemons. Pour the mixture into the already greased baking tin.
    3. Bake in the oven for 30 to 45 minutes, or till a skewer inserted in the centre comes out clean.
    4. When it comes out of the oven, while the loaf is still hot, poke holes with a knife.
    5. Make the drizzle by mixing the lemon juice and the icing sugar. Pour the drizzle over the loaf.
    6. Serve with cream and fruit. Enjoy!
