About this recipe: A perfect soup for any occasion. A heartwarming dish for cold nights, summer days and dinner parties.

Serves: 4 

  • 1 tablespoon olive oil
  • 2 onions, grated
  • 2 carrots, chopped
  • 3 celery sticks, chopped
  • 1 clove garlic, crushed
  • 400g tin chopped tomatoes
  • 200g spaghetti
  • 1L vegetable stock
  • 1 leek, chopped

  1. Heat the oil on a low heat in a large saucepan. Add the onion, carrot and celery and cook gently for 15 minutes until soft.
  2. Next add the crushed garlic and work that into the mix. Add the tomato and continue to cook on a low heat for another 10 minutes.
  3. Add the stock and leave to simmer for 30 minutes, adding the pasta after 15 minutes. Stir occasionally and adding salt and pepper if you feel it needs it.
  4. Chop the leek and add after the soup has simmered. Leave for another 10 minutes to simmer, or till leek is soft, and then serve.
