    About this recipe: This chocolatey treat will get everyone craving for another piece. It is very like rocky road but better. This recipe is simple, quick and fun.

    Makes: 16 chocolatey biscuit fridge cake

    • 110g butter or margarine
    • 1 tablespoon brown sugar
    • 3 tablespoons cocoa powder
    • 3 tablespoons golden syrup
    • 225g digestive biscuits, crushed lightly
    • 125g sultanas
    • 150g cherries, cut into quarters
    • 200g chocolate broken into pieces

    Prep:10min  ›  Extra time:1hr setting  ›  Ready in:1hr10min 

    1. Lightly grease a 20x20cm tin.
    2. Melt the butter or margarine together with the sugar, cocoa and syrup over low heat.
    3. Remove from heat and add the biscuits, sultanas and cherries. Stir it all together.
    4. Pack into the tin and put the mixture in the fridge. Let it set for an hour.
    5. Melt the chocolate in a bowl over a pan of simmering water. Then cover the top of the mixture with it. Keep in the fridge till the chocolate hardens.
    6. Slice into squares and enjoy!


    Add marshmallow if you want to make a rocky road. Works fine with gluten free biscuits.
