White chocolate chip chocolate brownies

About this recipe: A very rich double chocolate chip brownie served well with vanilla ice cream and cherry or chocolate sauce.

Serves: 16 

  • 450g dark chocolate (I use 70%+ cacao)
  • 450g butter
  • 600g caster sugar
  • 6 eggs
  • 150g plain flour
  • 20g baking powder
  • 200g white chocolate chips

  1. Preheat oven to 160 C / Gas 3. Line a baking tray with parchment.
  2. Melt the chocolate and butter together in a bowl (microwave or over hot water set over a saucepan, not direct heat).
  3. Whisk the eggs and sugar together well using an electric whisk until pale and fluffy.
  4. Add the melted chocolate mixture to egg mixture. Whisk until thickened.
  5. Sift in the flour and baking powder to the mixture and fold in to combine. Fold in the white chocolate chips. (Also fold in any dried fruit and/or nuts at this stage if desired.) Tip mixture into prepared tray.
  6. Bake for 30 to 35 minutes, or till the centre is just set. Serve hot or cold. Enjoy!


You can use whatever strength chocolate you like, I just prefer a darker flavoured brownie. Milk or dark chocolate chips can be used too. You can also add dried fruit - like currants or cherries - or chopped nuts, such as almonds, hazelnuts or walnuts.
