If you have very small potatoes try making wedges. You can buy herbs, cheeses and spicy flavours from the supermarket especially for homemade wedges.
Already doing this but tweak for midweek - rushing in from work I pre-cut my chips, and blanche them prior to freezing. I do this for roasted as well. That way no bags start sprouting and I always have something quick to cook. - 27 Apr 2014
