Baked salmon with lemon and thyme

    I love the way the zesty lemon and thyme balance with the salmon. This is a great lower-fat recipe, too.

    Serves: 2 

    • 1 tablespoon olive oil
    • zest of 1 lemon
    • juice of 1/2 lemon
    • 1 tablespoon chopped fresh thyme (fresh is very worth it)
    • 1 pinch coarse sea salt
    • 2 salmon fillets, skin-on, about 225g each

    1. Preheat oven to 180 C / Gas 4. Lightly grease a shallow baking dish.
    2. Combine olive oil, lemon zest, lemon juice, thyme and salt. Place salmon in prepared dish and pour sauce over.
    3. Bake for about 15 to 20 minutes, until inside of fish is still pink, but not jiggly.


    I served this with spring peas and steamed quinoa.
