Quick and Easy Bread Pudding

    I have followed a number of different recipes for bread pudding over the years but they often call for something I don't have in the cupboard, or the process seems more long-winded than it need be. That's why I decided to simplify things, for a good, simple and quick-to-make Bread Pudding recipe!

    • Any old stale (not mouldy!) bread, french sticks etc
    • Approx 100ml Milk
    • 50g Butter/Margerine
    • 50g Sugar (any)
    • Mixed spice (or: 1 tsp each of ginger, nutmeg, ground coriander, ground cinammon)
    • Hand full of raisins or sultanas


    1. Soak bread in a large bowl for an hour or until soft.
    2. Put oven to 200 degrees.
    3. Drain water from bread, and mix in sugar.
    4. In a saucepan heat milk, butter, mixed spices and sultanas.
    5. Pour saucepan contents over bread and stir well.
    6. Tip bread pudding mix into oven dish.
    7. Sprinkle top with sugar, and place a few dollops of butter on the top.
    8. Cover with foil and place in oven for 45 - 55 mins - take off foil ten minutes from the end.
    9. Allow to cool and enjoy!


    The one pictured looks dark because I used soft brown sugar for the topping, which has browned it off nicely. Yum!
