    About this recipe: Easy to make and just as easy to eat !

    Ingredients

    • 125g gratted carrots
    • 100g castor sugar
    • 75g magarine
    • 100g plain flour
    • 1 tsp cinnamon
    • 1 tsp baking powder
    • 1 large egg
    • 60 g sultanas
    • 12 cupcake cases

    Method

    1. Put oven on at gas mark 6/200 °c /180°c for fan ovens
    2. Peel and grate the carrots.Mix the sugar and magarine in a bowl until fluffy.
    3. Sift in the flour ,baking powder and cinnamon.
    4. Add the egg and mix well . Then add the sultanas and carrots then mix again .
    5. Divide the mixture into the cup cake cases
    6. Pop into the oven for 15 - 20 min
    7. When cooked transfer to a wire rack to cool ..
    8. When cool you can gobble them up !

    Tip

    Instead of using sultanas you could use dryed cranberries or apricots.
