Creamy Finnish ham and potato casserole, kinkkukiusaus

Simple yet easy ham and potato casserole! I'm not usually a big fan of Finnish food (although I am Finnish), this has been one of my favourite dishes since I have been a little girl. I've never seen a recipe for this in English so I thought that it would be nice to share :) Serve with salad if you like.

    Devon, England, UK
    5 people made this

    • 500 g of potatoes, peeled and cut in strips
    • 250 g of ham, cut in strips
    • 300 g of double cream
    • Salt, pepper, garlic powder and paprika powder to taste
    • Butter for greasing the baking dish
    • 20 g of mature cheddar cheese.

    1. Add 1/3 of the potatoes in the baking dish and add the spices (I added about a tea spoon of each per layer). Add half of the ham on top of the potatoes. Add half of the remaining potatoes and add the spices. Add rest of the ham, potatoes and spice.
    2. Add the cream. If it doesn't seem to go everywhere, mix the dish a little with a spoon still trying not to break the layers (if you do, it's not a big deal). It is important that all the potato is covered with cream, so it bakes in the oven nicely.
    3. Add the cheese on top and put the dish in the oven (gas mark 5). Bake in the oven for about hour and a half, remember to check it once in a while.
    4. Serve with salad (if you like) and enjoy!

Omg this is terrific if a little unhealthy, the ultimate in comfort food. The other half loved it too and he is quite fussy about what he likes. Must confess I did add a little more cheese than you recommended and cooking time was only one hour fifteen as the cheese was beginning to burn. Thanks for this wonderful recipe, I have a feeling it will become a winter favourite.  -  20 Feb 2015
