Kinkkukiusaus (Finnish ham and potato casserole)

    I'm not usually a big fan of Finnish food (although I am Finnish) but this easy casserole has been one of my favourite dishes since I have been a little girl. I've never seen a recipe for this in English so I thought that it would be nice to share :) Serve with salad if you like.

    Serves: 4 

    • 500g potatoes, peeled and cut in strips
    • salt
    • pepper
    • garlic powder
    • paprika
    • 250g ham, cut in strips
    • 300g double cream
    • 20 g mature cheddar cheese

    Prep:15min  ›  Cook:1hr30min  ›  Ready in:1hr45min 

    1. Preheat the oven to 190 C / Gas 5. Grease a baking dish.
    2. Add 1/3 of the potatoes to the dish. Season then place the ham on top of the potatoes. Add half of the remaining potatoes and season again. Add the rest of the ham, potatoes and season.
    3. Add the cream. If it doesn't seem to go everywhere, mix the dish a little with a spoon still trying not to break the layers (if you do, it's not a big deal). It is important that all the potatoes are covered with cream, so it bakes in the oven nicely.
    4. Top with the cheese and bake in the oven for about 1.5 hours, checking once in a while.

    Omg this is terrific if a little unhealthy, the ultimate in comfort food. The other half loved it too and he is quite fussy about what he likes. Must confess I did add a little more cheese than you recommended and cooking time was only one hour fifteen as the cheese was beginning to burn. Thanks for this wonderful recipe, I have a feeling it will become a winter favourite.  -  20 Feb 2015
