Zizzi's strozzapreti pesto rosso

    I have discovered that I can make Zizzi's Strozzapreti Pesto Rosso, aka spicy creamy chicken pasta, from home for a fraction of the price and tastes exactly the same as my favourite meal on the Zizzi's menu!

    Serves: 2 

    • 200g strozzapreti pasta, or short pasta of choice
    • 1 cooked chicken breast
    • olive oil
    • chilli paste or chopped fresh chilli, to taste
    • 3 spring onions
    • 60 to 80ml crème fraîche
    • 120ml vegetable stock
    • 60g red pesto

    1. Bring pan of water to the boil and add pasta. Cook according to packet instructions.
    2. Tear cooked chicken breast using two forks into smaller pieces and add to sauté pan with a little olive oil. Add chilli to taste and cook for 1 to 2 minutes over medium high heat.
    3. Snip in the spring onions to the chicken and chilli. Then add the crème fraîche, vegetable stock and finally the red pesto and mix.
    4. Leave the sauce to reduce and thicken while the pasta finishes cooking.
    5. Drain pasta and add to the sauce and gently combine.
    6. Serve immediately with a large glass of vino and enjoy!
