About this recipe: This is a brilliant pancake recipe. It works every time for me. I would suggest putting a plate over boiling water and each time a pancake is ready pop it on the plate to keep it warm.

Makes: 6 pancakes

  • 2 eggs
  • 110g (4 oz) plain flour
  • 225ml (8 fl oz) milk
  • 25g butter, melted
  • sunflower oil for frying

Prep:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Crack the eggs into a bowl and add the flour, and whisk until completely combined. Slowly stir in the milk bit by bit until all the milk is gone and you are left with a smooth, pale mix. Finally, whisk in the melted butter. After that, pour into a jug.
  2. Heat some oil in a frying pan over medium high heat. Pour in the pancake batter, enough to thinly coat the bottom of the pan. Cook for a few minutes till the edges are dry and bubbles appear on top of the pancake. Flip to cook the other side for a further minute till the other side is golden. Repeat with remaining batter.


Best served with maple syrup, sugar, lemon and sugar - one of my favourites- Nutellla® or chocolate spread. I hope you enjoy this recipe as much as me and my family! Happy baking!!!
