Smoked haddock and cheese fish cakes

    These cheesy smoked haddock fish cakes have lovely flavour, they're one of my children's favourite meals.

    Makes: 8 fish cakes

    • 225g smoked haddock, cubed
    • 1 knob butter
    • salt and pepper to taste
    • 225g mashed potato
    • 150g grated cheese
    • 25g plain flour
    • 1 egg, beaten
    • 100g breadcrumbs
    • oil for frying

    1. Put fish in a buttered flameproof dish, season and cover with foil. Steam over a pan of boiling water for around 15 minutes, or until it flakes easily.
    2. Flake fish and mix with potatoes and cheese. Season to taste and divide into 8 portions, shaping each into a round cake.
    3. Coat each fish cake in the flour, dip into the egg, then coat in breadcrumbs.
    4. Fry the fish cakes in hot oil, over a medium heat, until golden brown underneath, then turn and cook the other side till golden.
    5. Drain on kitchen roll and serve.


    Use more or less cheese, according to your taste. Make sure you don't turn them before the bottom is golden brown, as they do love to fall apart!
