Mediterranean style pan-fried rosada goujons

    A tasty Mediterranean style version of a family favourite. Fish goujons are pan-fried in olive oil, seasoned with garlic and herbs.

    Serves: 2 

    • 100g plain flour
    • salt and freshly ground black pepper, to taste
    • 2 (150 to 175g) rosada, cod or haddock fillets, sliced into goujons
    • 1 egg
    • 100g fresh breadcrumbs
    • extra virgin olive oil, for cooking
    • ½ teaspoon finely chopped garlic
    • 4 sprigs fresh thyme

    1. Combine the flour with salt and pepper. Place the fish goujons on a flat dish and sprinkle over with the seasoned flour, making sure they are well coated on both sides.
    2. Lightly whisk the egg in a shallow bowl. Dunk the goujons in the egg, then cover in the breadcrumbs, again ensuring they are well coated on all sides. Shake to remove any excess crumbs.
    3. Heat a generous amount of olive oil a large frying pan over medium heat. Add the garlic and thyme; when the garlic starts to sizzle, add the goujons.
    4. Cook for some 3 minutes or so each side until crispy and just cooked through. Serve!

    Serving suggestion

    Try the goujons with green beans and a lemon and dill vinaigrette.
