This is a dish of bright, vivid colour and bold flavours. Onions, tomatoes and red peppers make a chunky vegetable sauce for chicken pieces, with spicy chorizo sausage, sun-dried tomatoes, rosemary and olives adding tastes of the Mediterranean. Serve with crusty bread.
For another Mediterranean dish in the same style, omit the chorizo, red peppers and sun-dried tomatoes and make the sauce using 3 x 400g cans of chopped tomatoes and 2 tbsp thyme or lavender honey. Simmer uncovered for 30 minutes or until the sauce reduces and thickens. Serve scattered with 50g toasted flaked almonds.
I found the sun-dried tomatoes a bit too over-powering, maybe i should have chopped them into smaller pieces rather than roughly chopped. - 14 Oct 2009
