Super hearty leek, carrot, cauliflower, bacon and cheese pie

    This was an experiment and now I cook it for my family every couple of weeks and they love it. Mix and match ingredients to suit your own tastes.

    Makes: 1 pie

    • 5 carrots
    • 2 leeks
    • 1/2 large cauliflower
    • 25g butter
    • 350ml milk
    • 200g cheese
    • 8 rashers smoked bacon
    • 2 sheets shortcrust pastry

    1. Chop all your veg into bite sized pieces and put them on the boil for 20 minutes or until soft. Drain.
    2. Whilst the veg is boiling melt your butter in a saucepan. When the butter has melted add the milk. Whilst the milk is warming grate the cheese on a plate and then add to the saucepan.
    3. Then fry the bacon in a frying pan until cooked to your liking and make sure you are stirring the cheese sauce at the same time.
    4. Line a Pyrex® dish with the pastry and mix the veg and bacon together and add to the dish.
    5. Pour over the cheese sauce and place the lid of the pastry on top. Brush with any left over cheese sauce or milk.
    6. Bake in a preheated 180 C / Gas 4 oven for 45 minutes, or till pastry is golden brown.

    I left out the bacon, vegetarian, and added a little flour to make the cheese sauce thicker as well as mustard powder into the sauce. Threw any veggies out of my garden, silver beet, broccoli etc, ended up with enough filling for two huge pies. Definite winner in our house.  -  29 Aug 2017  (Review from Allrecipes AU | NZ)
