BBQ chicken satay

    Fire up the BBQ for this authentic Indonesian chicken satay. Skewers of perfectly cooked chicken served with a fresh and flavourful peanut sauce. So delicious that no one will be able to have just one!

    Makes: 20 skewers

    • 6 chicken breast fillets, cut lengthways into strips
    • For the marinade
    • 6 tablespoons soy sauce
    • 6 tablespoons passata
    • 2 tablespoons groundnut oil
    • 4 cloves garlic, minced
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon ground cumin
    • For the peanut sauce
    • 1 tablespoon groundnut oil
    • 1 clove garlic, minced
    • 1/4 onion, finely chopped
    • 2 tablespoons soy sauce
    • 3 tablespoons sugar
    • 8 tablespoons peanut butter
    • 250ml water
    • 1/2 lemon, juiced

    1. Put 20 wooden skewers in a shallow dish and cover with water. Let soak for 20 minutes.
    2. Combine all marinade ingredients. Place chicken strips in a dish or bowl, pour over marinade and mix well so that all of the chicken is well coated. Let marinate for 15 minutes.
    3. Meanwhile, make the peanut sauce. Add the oil to a hot frying pan over medium-high heat. Add the garlic and onion and cook and stir for about 4 minutes, or till softened. Add the soy sauce, sugar, peanut butter and water. Mix well. Cook for about 5 minutes, till thickened slightly. Once the sauce reaches your desired consistency, add the lemon juice and remove from heat.
    4. Preheat a barbecue to high heat. Thread the marinated chicken onto skewers, allotting one chicken strip per skewer.
    5. Place the skewers on the preheated barbecue. Barbecue for a total of 10 minutes, flipping once halfway through cooking.
    6. Serve the satay skewers straightaway with the peanut sauce for dipping.

    Made this and was delicious, I had with fried rice, marinade chicken was lovely but for peanut sauce I would reduce sugar and peanut butter good recipe thanks for posting  -  12 Sep 2015
