    About this recipe: If you are a fan of veggies, here is a quick and easy way to have them. It's a result of experimenting so would love to have feedback. Tastes best with basmati rice.

    Ingredients
    Serves: 4 

    • 1 small head cauliflower, cut into florets
    • 100g French beans
    • 1 small green pepper, seeded and chopped
    • 1 small red pepper, seeded and chopped
    • 1 small head broccoli, cut into florets
    • 50g mushrooms, sliced
    • 50g green peas
    • 1 medium potato, diced
    • 1 medium carrot, sliced
    • 2 to 3 tablespoons olive oil
    • 3 to 4 cloves garlic, chopped
    • 1 teaspoon ginger paste
    • lemongrass, to taste
    • 1 tin tomato puree
    • 1 tablespoon soya sauce
    • 1 teaspoon lemon juice
    • 1/2 tin coconut milk
    • 5 to 6 fresh mint leaves, to garnish

    Method
    Prep:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Steam all the veggies till tender yet firm to the bite.
    2. Heat the oil in a wok. Once heated, add garlic cloves, ginger paste, lemongrass and saute.
    3. Once the garlic is light brown, add tomato puree, soy sauce, lemon juice and mix gently.
    4. Once the oil separates, add the veggies and mix it well with the puree. Add coconut milk, mix well and keep on low flame till the sauce is consistent.
    5. Remove from the heat and garnish with fresh mint leaves and serve with plain steamed rice.
