Butterscotch icing

    I wanted something different to top my sultana and ginger muffins and came up with this yummy butterscotch frosting.

    Serves: 12 

    • 220g brown sugar
    • 110g butter
    • 60ml milk or single cream
    • 1 large tablespoon butterscotch syrup or golden syrup
    • 1/4 teaspoon salt
    • 130g icing sugar

    1. In a saucepan over a high heat bring all of the ingredients, except the icing sugar, to the boil for 3 minutes. Remove from the heat and sift in the icing sugar, mix until smooth.
    2. Allow to cool slightly and spoon over muffins or cakes.
    3. Because of the delicious smell you'll want to dive straight in but try to be patient till the frosting sets. Mmm enjoy!
