About this recipe:
I wanted something different to top my sultana and ginger muffins and came up with this yummy butterscotch frosting.
220g brown sugar
60ml milk or single cream
1 large tablespoon butterscotch syrup or golden syrup
1/4 teaspoon salt
130g icing sugar
- In a saucepan over a high heat bring all of the ingredients, except the icing sugar, to the boil for 3 minutes. Remove from the heat and sift in the icing sugar, mix until smooth.
- Allow to cool slightly and spoon over muffins or cakes.
- Because of the delicious smell you'll want to dive straight in but try to be patient till the frosting sets. Mmm enjoy!
