Salmon and broccoli pie

    This salmon and broccoli pie is nourishing and pretty easy to make - in fact, if you can make a cottage pie, this will be no trouble for you!

    Serves: 4 

    • 650g potatoes, peeled and diced
    • 1 tablespoon butter
    • 1 tablespoon plain flour
    • 300ml milk
    • 450g cooked salmon, roughly flaked
    • 300g cooked broccoli florets
    • salt and pepper, to taste
    • chopped fresh parsley, to garnish

    1. Bring a large saucepan of salted water to the boil and add the potatoes. Cook until tender (about 15 minutes) then drain and mash.
    2. Preheat the oven to 200 C / Gas 6.
    3. In a frying pan over a medium heat, melt the butter then stir in the flour. Gradually whisk in the milk to make a thick sauce. Add the salmon and broccoli and stir until heated through. Season well.
    4. Transfer the salmon and broccoli mixture to an ovenproof casserole dish then spoon the mashed potato on top and smooth with the back of a spoon or fork.
    5. Bake in the preheated oven to 15 to 25 minutes until the potato is golden brown and the filling is bubbling. Remove from the oven and spoon onto serving plates. Garnish with fresh parsley.
