Chicken in mushroom and garlic sauce

    Chicken breast fillets are cooked to perfection in a mushroom and garlic sauce. This is a quick and easy recipe giving you a lovely chicken dish in 30 minutes or less!

    Serves: 3 

    • 250g chicken breast fillets
    • 2 tablespoons butter
    • 225g mushrooms, sliced
    • 2 cloves garlic, minced
    • 2 tablespoons plain flour
    • 300ml double cream
    • 1 tablespoons lemon juice
    • salt and pepper, to taste

    1. Cut the chicken breast fillets into strips lengthways. Melt the butter in a frying pan over a medium heat then add the chicken and cook and stir until no longer pink in the centre, about 12 minutes. Remove from the pan and keep warm.
    2. In the same pan, cook the mushrooms and garlic until soft then sprinkle the flour over and continue stirring for a few minutes.
    3. Pour in the cream and lemon and stir to thicken. Season and simmer for 3 to 5 minutes. To serve, place the chicken on a serving plate and pour the sauce over.

    The sauce really needs some other ingredients. This is just cream with mushrooms in it. Maybe I screwed up somewhere along the way but it really wasn't great. Needs some stock, some wine, something else other than just cream.  -  03 Oct 2016
