No-mayo tuna sandwich

    This sandwich does have egg, but is not a creamy style tuna filling. Fresh parsley, spring onion and lemon juice combine with the tuna to make a refreshing change to the standard tuna sandwich.

    Makes: 2 tuna sandwiches

    • 1 tin tuna, drained
    • 1 small spring onion, minced
    • 2 tablespoons minced fresh parsley
    • 1 teaspoon olive oil
    • 1 teaspoon fresh lemon juice, or to taste
    • 1 soft boiled egg, smashed with a fork into small pieces
    • 1/2 teaspoon prepared mustard
    • salt and pepper
    • 4 slices bread
    • 2 leaves lettuce

    1. In a small bowl, mash tuna with a fork. Add onion, parsley, olive oil, lemon juice, egg and mustard. Combine, and season with salt and pepper to taste.
    2. Serve filling between two slices of bread with a leaf of lettuce.
