Grape and Sultana sponge pudding


    About this recipe: Grape and sultana sponge pudding. A variation of an eves pudding. It's quick and easy and really tasty when served with natural yoghurt, Or just on its own.

    • 110g unsalted butter or margarine
    • 110g caster sugar
    • 1/2 teaspoon vanilla caster sugar
    • 2 eggs
    • 110g Self raising flour
    • 400g mixed green and red grapes
    • 2 Handfuls of sultanas
    • 3-4 tablespoons of water
    • 1/2 teaspoon cinnamon


    1. Place grapes, sultanas, water and cinnamon in an oven proof saucepan or oven dish bring to the boil and simmer. Meanwhile Cream together your butter and sugar until the mixture looks fluffy.
    2. Add the two eggs and vanilla. Whisk together until everything is mixed well
    3. Fold in the flour until the flour is combined with the other ingredients
    4. Spoon the sponge mix on top of your fruit mixture. Spread out to the edges.
    5. Place your oven dish on a baking tray and put in a 180 C / Gas 4, pre-heated oven. For approximately 30 minutes, Bake until the sponge is cooked, test using a skewer


    Enjoy hot or cold with natural yoghurt
