This decadent lime shortbread is a lovely variation on the more traditional shortbread. Lovely served alongside a creamy lime dessert for a bit of crunch.

200g unsalted butter, at room temperature
100g icing sugar
200g plain flour
1 pinch salt
1 tablespoon lime zest

Preheat the oven to 180 C / Gas 4. Grease a 30x20cm baking tin and line with baking parchment.
In a mixing bowl, cream the butter and sugar together until pale and fluffy. Gradually add in the flour, cornflour, salt and lime zest and knead until smooth. Transfer to the prepared baking tin and press into the base and sides. Prick with a fork all over.
Bake for 35 to 40 minutes or until firm and blushed golden brown. Remove from the oven and mark into squares. Allow to cool in the tin. Remove from the tin using the baking parchment to help you then cut into marked squares and serve.
