100 g flaked almonds browned and chopped, 1tsp smoked paprika, Tsp salt
Method
Heat olive oil in large casserole or pan, turn down heat and add:- Onions, Fennel,Chilli, Garlic and Saffron season generously with salt and pepper. Sweat vegetables for about 10 mins.
Add Tomatoes then pour in stock or water and the potatoes, check for seasoning.
Simmer for about 25 mins or until the potatoes are well cooked. Meanwhile place almonds on a baking tray and bake in oven until golden, Roughly chop to make coarse breadcrumbs and stir in Paprika and Salt add to pan.
Add fish in bite size pieces and cook until it turns opaque, Serve with whatever you fancy
