Ice-cream Muffins

    I kid you not...muffins made from ice-cream! A great recipe to get kids into the kitchen and baking; the magic of turning ice-cream into bread will fascinate them and this 3 ingredient recipe is so easy even the youngest members of the family will be able to help out!

    • 2 cups (500 ml) ice-cream of your choice
    • 1½ cups (375 ml) flour
    • 1 tsp baking powder


    1. Preheat the oven to 180 deg C and line a muffin tin with individual muffin cases. I manage to get 12 muffins from this recipe
    2. Place the ice-cream in a microwave proof bowl and melt for about 20 seconds; you want the ice-cream to be soft but not liquid and runny.
    3. Add the flour and baking powder and combine well.
    4. Spoon into the muffin tin.
    5. Bake for approximately 12-15 minutes depending on your oven; if a toothpick comes out clean they are ready!
    6. If the kids can wait, allow to cool before enjoying!


    These are not posh muffins in any way but they are great for kids; use whichever ice-cream flavour works best for your family, Customise with chocolate chips, nuts but most of all have fun making them!
