About this recipe:
Coulis is a fruit puree that can be served with an array of desserts and cakes. It's wonderful with cheesecake or with sponge cake and cream.
Makes: 300 g fruit coulis
300g soft summer fruits (strawberries, raspberries, blackberries or stoned cherries)
1 tablespoon lemon juice
fruit liqueur (optional)
- Place the fruit in a food processor or blender and process to a smooth puree.
- For a smooth coulis, pour the puree through a sieve to remove seeds.
- Stir in the lemon juice and sweeten to taste with sweetener.
- Add a little fruit liqueur, if liked, or if the coulis is too thick, stir in a little water to thin to the desired consistency.
