Easy tea fruit cake

    A lovely cake to enjoy with your favourite cuppa which keeps for weeks in airtight container.

    Makes: 1 fruit loaf cake

    • 340g (12 oz) mixed dried fruit (raisins,sultanas,currants and mixed peel)
    • 55g (2 oz) red cherries
    • 110g (4 oz) dark brown soft sugar
    • 200ml (7 fl oz) cold tea
    • 225g (8 oz) self raising flour
    • 1 egg, beaten

    Prep:15min  ›  Cook:1hr  ›  Extra time:8hr soaking  ›  Ready in:9hr15min 

    1. Place all fruit in bowl. Add brown sugar. Add cold tea and mix in well. Leave overnight.
    2. Turn on oven to 190 C / 170 C Fan / Gas 5. Line a large loaf tin.
    3. Add flour and beaten egg to the fruit mixture and and stir to combine. Pour mixture in loaf tin.
    4. Bake for 1 hour in a fan-assisted oven, a little longer in a regular oven. Test by inserting skewer; if it comes out clean the cake is done.


    If the top of the cake is browning too much during baking, loosely cover with a piece of aluminium foil.

    Great cake. Usually make 2 at a time and freeze one. I add mixed spice to mine  -  23 Jun 2017
