This hearty potato and cheese omelette will keep you going all day! Great for anyone working outdoors all day or on the go non-stop. Fill up and go!

3 tablespoons olive oil
450g potatoes, peeled and finely diced
1/2 red onion, diced
2 large green peppers, seeded and diced
200g tomatoes, chopped
6 large eggs
110g grated Gruyere cheese
2 tablespoons creme fraiche
2 tablespoons chopped fresh chives
salt and pepper, to taste

In a large frying pan over a medium heat, heat the oil and add the potatoes and cook and stir for 10 to 15 minutes until the potatoes soften, stir frequently to avoid sticking, cover the potatoes when not stirring. Add the onion, peppers and tomatoes and cook for a further 4 to 5 minutes.
In a bowl, whisk together the eggs, cheese, crème fraiche, chives and seasoning.
Pour the egg mixture over the potatoes and cook until the underside of the omelette is firm. Transfer to the grill to cook the top of the omelette until no longer runny. Remove from the grill, fold over and serve immediately!
