About this recipe: Fancy something different this weekend? Try this fabulous Indian-inspired omelette full of exciting flavours and some hearty vegetables to keep you going through the day.


Serves: 4 

  • 1 tablespoon olive oil
  • 1 small red onion, finely chopped
  • 1 small green chilli, seeded and minced
  • 2 cloves garlic, minced
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 200g boiled potatoes, diced
  • 1 red pepper, seeded and finely chopped
  • salt and pepper, to taste
  • 2 tablespoons butter
  • 4 eggs, beaten
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives

  1. In a frying pan over a medium heat, warm the oil then add in the onion, chilli, garlic and spices. Cook and stir for 5 minutes until the onions are soft. Add the potato and pepper and cook for a further few minutes. Season and set aside.
  2. In a frying pan over a medium heat, melt the butter. Pour in the eggs and cook for 2 to 3 minutes until the base of the omelette is firm. Add the filling then transfer to the grill to cook the inside. Once the inside is set, fold the omelette over and serve.
